Vitamins

The man is unable to synthesize them in adequate amounts and must introduce them with food.
Vitamins can be divided into liposoluble and water-soluble.

Liposoluble vitamins (A, D, E, K, F) are absorbed in the intestine with fats.
Vitamin A protects coating tissues, is a growth factor and allows the vision in low light. It is present in eggs, in ripe tomatoes, in carrots and spinach.
Vitamin D has an anti-rachitic action and fixes calcium. It is present in breast milk, in the egg yolk, in oil cod-liver. Also the skin forms it when stimulated by UV rays.
Vitamin E is the vitamin of fertility and protects the muscular and nervous tissues. It is present in fresh vegetables, eggs, milk, meat.
Vitamin K has an antihaemorrhagic action. It is present in spinach and cabbage.

Water-soluble vitamins (C and all those in Group B) are dissolved in water, are easily absorbable in the intestines but are quickly consumed by the body.
Vitamin C increases the defenses against infections, is a good antioxidant, facilitates the absorption of iron and other minerals, prevents scorbutus (a disease characterized by very poor state of health and hemorrhages). It is present in citrus fruits, in peppers, in the parsley, in ripe tomatoes.
Vitamin B1 prevents the beriberi (a disease of the nervous system) and is present in almost every food.
Vitamin B2 is a factor of growth and prevents dermatitis. It is present in green vegetables, milk and liver.
Vitamin B12 has an antianaemic action. It is present only in foods of animal origin.
Vitamin PP prevents pellagra (skin disease and nerve). It is present in milk, vegetables and cereals except maize.
Shortages of vitamin are frequent because of inadequate food supply, but poisonings of vitamins are not infrequent because of excesses in the introduction.
